The Saracco winery is located in the village of Castiglione Tinella, between Alba and Santo Stefano
Belbo. For four generations the Saracco family has produced a wine that is considered the reference
point for Moscato d’Asti. Now managed by Paolo Saracco, careful vineyard management and strict
control over the entire winemaking process has added to the family’s reputation and led to Paolo’s
nickname, “The Maestro of Moscato.”
Situated throughout the Castiglione Tinella appellation, the terroir and microclimate of the family’s
vineyards are particularly well-suited for the Moscato grape – limestone mixed with sandy veins and
elevation levels that provide just the right temperature and humidity levels.

| Technical notes |
| Produced from Moscato Bianco Canelli sourced from various estate vineyards in the village of Castiglione Tinella in the Cuneo province of Piedmont. Fermentation takes place in special pressurized tanks. After roughly a week of fermentation, when the wine has reached the proper balance of alcohol, sugar and acidity, it is chilled down and fermentation is arrested. The wine then goes through a sterile filtration to eliminate the yeast, and is bottled cold. To insure freshness the wine is fermented one tank at a time, 12 months a year. |
